Production is based on Ontario-grown apples, selected for balance across acidity, aromatics, and tannin. Fermentation is managed according to style. The modern range is produced through controlled, low-temperature fermentations to retain clarity and definition. These ciders are direct, clean, and structured, built to express fruit without excess.
Alongside this, the artisan series follows a different path. Fermentations are wild, and élevage takes place over time in barrel and bottle. The aim is texture and structure rather than immediacy. Tannins are allowed to carry the palate, with minimal adjustment. These ciders develop slowly through years of ageing.
The range is presented through a series of tasting flights that reflect this approach. The Essential Flight introduces the modern expressions. Seasonal releases provide variation. The Artisan Flight focuses on barrel-aged and wild-fermented ciders. Private tastings are available for those who prefer a more detailed discussion of fermentation, blending, and aging.
