Discover Niagara's Distinctive Distilling Style

While distilling spirits relies on great grains, that’s only part of the story when it comes to Niagara’s artisanal liquor scene. Niagara’s unique microclimate makes it a hotspot for winemaking and growing tender fruit and other seasonal produce. From using fresh-from-the-farm products to borrowing wine barrels to impart unique flavours during the aging process, the region’s distilleries get creative when it comes to adding a taste of Niagara to their bottles.

Dillon’s Small Batch Distillers in the Niagara Benchlands uses locally sourced fruit, fresh botanicals, and grains to ensure every bottle and ready-to-enjoy cocktail they produce is infused with the region's purest flavours. 

Spirit In Niagara Small Batch Distillers in Niagara-on-the-Lake uses freshly fallen fruit collected from their farms to create its deliciously diverse line of fruit spirits. The distillery’s Confessional Lounge also serves wine, beer, and food.

Limited Distilling, just outside Niagara-on-the-Lake, takes a “spirit laboratory” approach to crafting its creative product runs, exploring different ingredients, both local and from around the world. In addition to its spirits, the onsite retail store offers guests the opportunity to sip a craft cocktail while browsing a curated selection of barware, drink ingredients, and a massive vinyl record collection.

No Niagara spirit tour would be complete without a stop at Niagara’s original distillery, Forty Creek Whisky, in Grimsby. Named Whisky Maker of the Decade at the 2020 Canadian Whisky Awards, Forty Creek is changing the game in Canadian whisky.

Niagara Falls also boasts its own distillery. Niagara Distillery produces six signature spirits, including a vodka which is proofed down using water that has traversed the limestone torrent of the famous Falls!
